Confit duck legs are one of the great culinary specialties of Périgord. They come from fat ducks and are cooked slowly in fat to preserve them tenderly.
They are cooked according to the traditional recipe of our Périgord and respecting the authentic flavors of yesteryear. This is why they were so successful!
The duck legs are cooked delicately and for a long time in duck fat, to make them tasty and tender. They are cooked simply, with salt and pepper, without colorings or preservatives or nitrite salt.
The thighs that were chosen for this recipe were chosen for the quality of their flesh and the density of their meat.
After slow cooking in duck fat, they are coated with it when they are put into boxes.
